What I Cooked Wednesday #1


Hellooooo! So, I am not very good at writing up food plans on Mondays, so let’s try Wednesdays instead, shall we?

The plan is to share what meals I have planned, where I got the idea, maybe the odd recipe, and even recommendations/write ups of places/things I’ve eaten out or ordered in.

A blue bowl sits on the table. It is filled with a home-made clear broth, thick udon noodles, sugar snap peas, bok choi, and teriyaki-glazed chicken thighs.

That was my attempt at a broth with udon noodles, Asian inspired vegetables, and teriyaki-glazed chicken thighs from a couple of weeks ago.

It was quite tasty, but would definitely have benefitted from a recipe of some sort, instead of me just making it up inspired by a YouTube video of other people eating food at a restaurant…

This Week’s Planned Meals:

Picky Bits – That British New Year’s Eve staple dish. Spring rolls, flatbread things… just various bits of beige heaped on a plate. All eaten on the sofa in front of a film together (Pirates of the Caribbean 5) followed by Christmas cake and random seasonal sweet things.

Fish finger sandwiches with skin on fries – I was feeling a bit ropey on Monday (combination of too much alcohol and not enough sleep and accidentally forgetting my meds the day before…) so dinner was very much a ‘what there was in the freezer’ meal. Starting the year off in style…

One-Pot Lasagne-Style Pasta (Sorted Sidekick App) – This recipe is part of the Shop Fast, Cook Slow ‘Recipe Pack’ on the Sidekick app. These packs are great – they are designed to reduce food waste and make food shopping easier by putting together sets of recipes that share ingredients and use up standard size packs of food. So I will be cooking the other recipes in the pack as well. This one was easy to make and super tasty – and meals I can cook in just one pan are always a winner because they create less washing up.

Pizza – Confusing things by not having pizza on a Monday, but I’ve got plans for Wednesday this week so the fail safe ‘cook your own when you want it’ meal of pizza has moved days! Not making our own this week, I have instead bought 10″ pizzas from the Morrisons’ Pizza Deli because they are both better value and better tasting than the standard frozen/fresh ones.

Ginger-Braised Pork Belly with Rice (Sorted Sidekick App) Recipe two from the recipe pack, I am looking forward to this one because I do love pork belly. It will be my first time cooking it from scratch myself though, so I am a little nervous. I do love that the kids are getting a bit more adventurous with food now, so I am less concerned that I am going to put in all the effort and then have it refused at the table later.

Slow-Cooked Meatballs with Cheesy Mash (Sorted Sidekick App) – Final recipe from the pack, though I am making cheesy mash instead of the suggested cheesy polenta. Not because I have anything against polenta, I just couldn’t find it in the shop.

Serrano Ham, Sprout and Crispy Cheddar Pasta (Sorted Sidekick App) – I still have sprouts lurking in the fridge so I looked up sprout recipes on the Sidekick app and decided this sounds tasty. Curious about the crispy cheddar bit, too…
