Last week went quite well once we got over Monday.
Monday did not go so well. I thought it would be the salmon that put the kids off but instead Arthur decided that spinach is demon food and flat out refused to eat it. Which was unfortunate as it was quite a large part of the Spinach, Salmon & Cherry Tomato Linguine (which was actually tagliatelle) – also we made him eat a tomato (just one) which went down like rat poison. So yeah, might not make that one again for a while!
The Smalls did hoover up the Enchiladas though even though I didn’t chop the pepper and celery beyond recognition. This is a Good Thing because the Enchiladas were easy to make as well as tasty.
The pasta bake thing was nice enough but I’m not convinced it was worth all the effort of making butternut squash and carrot puree for. I think if I make it again I need to attack it with some herbs or spices to make it taste less… nothingy. It was packed full of veggies though and everyone ate it, so not a total loss.

Monday – Beef Lasagne with Vegetables
Arthur has been requesting this for weeks. It is his favourite.
Tuesday – One Pot Chicken in Caramelised Onion and Yoghurt Sauce
This is one that someone posted on Facebook that I looked at thought looked super tasty. It’s a recipe from the winner of the 2017 Masterchef programme, Saliha and can be found on her website here.
Wednesday – Beef Bourguignon
This is being shoved in the slow cooker and is based on a Coleman’s packet mix that I found in the cupboard. It’s a 50/50 thing as to whether the Smalls will eat it because it’s stew and they periodically decide they don’t like ‘wet’ food. Ah well, we’ll see.
Thursday – Cheese & Onion Tart with Spaghetti Shapes
Back to My Daddy Cooks for this Cheese Tart that I have made in the past. It’s cheaty because it uses ready-made pastry, but it is also quick and tasty and eaten by everyone, so I’m all for it. (Yes, I am still trying to use up the Christmas onions. There were a LOT of onions.) As for the spaghetti shapes, I had a random craving for them whilst I was meal planning and I’m the chef so that’s what we’re getting!
Friday – Havana Curried Pork with Rice and Fresh Vegetables
I spotted the spice mix packet for this on the shelf when I was buying something entirely different the other day and thought it sounded tasty. I’m trying to build up a bit of a spice… acceptance, in the Smalls so a new style of curry might be a winner. (It might also be a disaster, but I won’t know if I don’t try!)
Saturday – Fish Pie with Peas and Sweetcorn
I like fish pie and I havent had it in aaaaaaages. And with the Smalls happily eating salmon last week, I am hoping they will eat this too. I’m going to follow this recipe except I’m using a mixture of different fish instead of just one white fish.
Sunday – Cheesy Smoked Sausage Pasta
I like doing something ‘safe’ on a Sunday night so that the Smalls go to bed well-fed and happy before starting the school run madness again in the morning. I’m not using a recipe for this, just planning on cooking up a basic cheese sauce and stirring it through cooked pasta and chopped smoked sausage. Warm, hearty and easy to make – my favourite kind of food!
