Ah, Monday again.
I sort of stuck to the plan last week – I had to swap a couple of meals round because of the use-by dates on the ingredients and one night none of us were overly hungry so we just had toast but that was a night I had a ‘freezer meal’ planned so it can just carry over to these week as nothing is going to go off!
Breakfasts will be the usual choice of: Toasted Waffles with Yoghurt & Berries, Toast with a variety of toppings, breakfast cereal or porridge.
Lunches are sandwiches or soups depending on the weather and how cold we are!
There is plenty of fruit for snacks and yogurts for puddings throughout the week.
The evening meals I have planned are:
Monday Night: Stuffed Chicken Breasts with Potatoes and Peas
Tuesday Night: Pizza with Fresh Salad
Wednesday Night: Fish, Chips and Peas
Thursday Night: Ham & Mushroom Pasta – this is Tori’s new recipe to learn in February!
Friday Night: Chicken Grills with Cheese & Vegetable Bake
Saturday Night: Quiche with Potatoes and Mixed Vegetables
Sunday Night: Fish Cakes with Wedges and Sweetcorn
