Back to reality with term time looming means back to meal planning instead of the Christmas & New Year diet of ‘eat whatever you want, whenever you want it’ and I’m actually kind of looking forward to it a bit. I’ve lost all track of time since December 21st or whenever it was that school broke up and stollen started being an acceptable meal at any time of day.
We are trying to be a bit more frugal this month (because January) so I’ve started the week by cooking a whole chicken in the slow cooker to go in a few different meals. (It was cooked in a pint and a half of local ale courtesy of our friends who got married and gave us the job of bringing home the left-over beer. You may notice the ale appearing in another recipe during the week – there was a fair bit left and we didn’t want to waste it, but also couldn’t face drinking all of it. Beer bread has also been baked!!)
Also this week has an extra day in because we did the weekly shop a day early as we had no food in the house after holidays and weddings and so forth. That’s why today’s post is on Sunday and not Monday. Normality will resume next week!
Sunday: Cauliflower Macaroni Cheese with Slumbering Monk Chicken – Cauliflower cheese & macaroni cheese are basically the same thing, so why not combine them for the ultimate comfort food bake? Throw in some of the slow cooked boozy chicken and we are onto a definite winner!
Monday: Slumbering Monk Chicken, Potatoes, Peas & Sweetcorn – Nice and simple dinner for the last day of the holidays. Low stress for me so I can save my heavy sighs for when one child or another announces that they had holiday homework fifteen minutes before bedtime instead.
Tuesday: Chicken & Cheese Toasties – Ah, Term-Time Tuesday. Or as I like to call it ‘Whydoalltheclubshappenonthesameday-day’. Food on Tuesdays needs to be super fast because everyone is everywhere and it needs to be wolfed down in about ten minutes somewhere in the middle.
Wednesday: Beef, Mushroom & Slumbering Monk Pie with Chips & Sweetcorn – Oh look, more beer!
Thursday: Party food! – My Aunty is over from Australia for the first time in years and we will be sharing a party buffet with her and my parents tonight. It will be the first time she’s met The Smalls properly and I’m super excited to see her!
Friday: Gnocchi with Spinach & Creamy Tomato Sauce – I *think* I have made this before and The Smalls ate it. Hopefully they do again, otherwise they’ll be hungry.
Saturday: Lentil, Smoked Sausage, Courgette & Tomato Salad with Fresh Baked Bread Rolls – I don’t even know if I’m going to like this, never mind The Smalls. But hey, you don’t know if you don’t try and lentils are good for being frugal so if we do all like it, it will be a good addition to the repertoire.
Sunday: Spaghetti & Meatballs in a Tomato & Onion Sauce – A family favourite today, to make up for crazy adventures yesterday!
