Another week is upon us – this week we have a Pub Quiz, Board Games Club, and I am taking on the RYA Powerboat Level 2 course at the weekend. (Have I done Level 1? No, but apparently you sort of do both through the weekend of the Level 2 course.)

Plus all the usual kids club chaos of course, because there’s no such thing as a quiet week.

Last week was a bit manic but full of family fun and laughter – my favourite kind of manic! This week is busy but slightly less insane… I’m hoping that next week is nice and quiet because I could do with a rest – it’s been all go since Christmas!!

Monday: Spaghetti & Meatballs – Yeah this didn’t happen last week because things got switched around a bit as the week played out. But that’s fine, everything’s still good to be eaten today instead.

Tuesday: Sesame Beef Chow Mein – Quick and easy is the name of the game today (because Tuesday), so chow mein it is. One of those dishes where slicing up the vegetables almost takes longer than cooking the entire dish.

Wednesday: Fishcakes with potatoes and vegetables – We haven’t had fishcakes in ages – I have cheated and bought frozen ones this week but I am thinking I might make some of my own some time to stick in the freezer for the next time I get the urge to eat them.

Thursday: Toad In The Hole with mashed potatoes, vegetables and onion gravy – Hello January comfort food!

Friday: Mozzarella & Tomato Pasta Bake with Roasted Mediterranean Vegetables – Trying to combine a bit of summer colours with winter comfort food here.

Saturday: Chicken Nuggets with Chips and Vegetables – I suspect I will be tired and cold. Weekend food will be courtesy of the freezer and the oven plus zero effort required from me!

Sunday: Chicken & Bacon Pie, Chips & Vegetables – Hopefully I will be celebrating my new qualification with this meal!
